Thang Co
Thang Co is a traditional dish of the H’Mông people and other ethnic minorities in the northern highlands of Vietnam, especially popular in Sapa. It is made from horse meat and offal, simmered with a variety of local spices such as cardamom, cinnamon, and star anise, creating a strong and unforgettable flavor. More than just a dish, Thắng Cố is a cultural symbol often enjoyed at local markets and festivals.
Nowadays, the dish is sometimes adapted to suit broader tastes by using beef or buffalo instead of horse meat. Its rich broth and warming nature make it perfect for cold days in the mountains. Thang Co is often paired with local corn wine to enhance its flavor and provide warmth. However, the strong smell and flavor of the offal can be challenging for some, making it a dish for the adventurous and culturally curious. It remains one of the most authentic culinary experiences in Sapa.
